    Three years after opening its doors, Eleven has arrived at its most authentic expression yet. What began as a chic, globally inspired destination restaurant has evolved into something far more grounded: a deeply local, proudly Franschhoek-rooted dining experience shaped by its valley, its people and its producers.Today, Eleven is intentionally working towards being 100% Franschhoek-sourced – from its ingredients and team to the details that shape the dining room itself. While this goal may never be absolute in every department, the direction is clear, deliberate and meaningful.

    From Global Ambition to Local Identity

    When Eleven opened in 2023, its identity was defined by ambition. A tasting menu set the tone – contemporary, refined and globally informed. A snack menu soon followed, inspired by the restaurant’s street-corner position and balcony views, allowing for lighter, more spontaneous dining moments.

    With this came a commitment to hyper-seasonality – an intentional narrowing of focus in a world of endless choice. Over time, this philosophy deepened further, evolving from seasonal to hyper-local. Place, not trend, became the defining influence.

    “The identity of Eleven has been evolving for a long time,” says founder Ryan Shell. “It distils to its essence, and this is as close as we’ve come.”

    A Menu That Reflects the Valley

    A pivotal shift came with the introduction of an à la carte menu. This move made Eleven more accessible and welcoming for local diners, allowing the restaurant to become part of everyday Franschhoek life.

    The guiding principle became simple yet powerful: cook what is available here, right now, and do it exceptionally well. Today, Eleven’s menus are built around ingredients sourced from within the Franschhoek valley, often from producers located less than a dozen kilometres away.

    Through these relationships, Eleven now sources all of its protein locally and approximately 60% of its fresh produce directly from nearby farmers. What began as an intention has grown into a network rooted in trust, transparency and shared values.

    A Menu Designed as a Journey

    Eleven’s menus retain their signature sense of refinement while offering flexibility and choice. Guests can curate their experience, whether stopping by for a light business lunch or settling in for a celebratory evening.

    Snack offerings are perfect for balcony dining with a glass of wine, including oxtail arancini from nearby Babylonstoren served with chilli aioli. Starters feature dishes such as Three Streams smoked trout tartare with raspberry foam and fennel salad.

    Mains highlight the valley’s produce, including Dalewood whipped feta ravioli (V) with smoked tomato sauce, confit tomatoes and basil, and La Combé suckling pig served with sweet potato, apple, leeks and port demi-glace.

    The Golden Thread – From Food to People

    Eleven’s transformation extends beyond the plate. The dining room quietly reflects the same philosophy of place: wildflowers on tables, feathers marking place settings and porcupine quills collected by a local farmer. These subtle details tell a larger story of land, community and care.

    The team, too, is now almost entirely Franschhoek-based, with young local talent being trained and developed as part of Eleven’s long-term vision.
    “It’s not just about what we’re serving,” says Shell. “It’s about who is serving you.”

    The wine programme mirrors Eleven’s approach to food, prioritising proximity, relationships and shared values. Direct engagement with local winemakers has strengthened partnerships and enhanced the overall dining experience, reinforcing the sense of place at every touchpoint.
